I am so shocked and saddened to hear of Elizabeth's illness and passing. Elizabeth and I worked together for about 10 years or so before her retirement. She was a beautiful soul and a great teacher. Her passion for food and nutrition never went unnoticed, and she was a wealth of knowledge both to her colleagues and to her students. I will miss her infectious laugh, her sense of humor, and of course, her stories.
To her family: Elizabeth spoke of you often and her love for you was profound. I pray you find solace, somehow, in your love for her and in your memories of her.
Dearest Elizabeth, I am grateful to have known you. I will always remember our times together, and will miss you and our chats dearly. I am saddened your retirement and desire to travel more were cut short on earth, but I can only hope you now get the opportunity to see the world… in a different way… over and over again.
